This sounds like it would be better in the cooking area?
Lots of game birds have red meat. Ptarmigan, spruce grouse, sharp tail grouse, etc have the red meat. Ruffed grouse and Blue Grouse are larger and hang around new growth forests and these have white meat that works awesome in most any chicken recipe.
chickens are not game birds.
pheasant, Duck, quail etc are game birds,
Chicken will be the easiest to get. Why not just USE chicken?
