Every organism has a whole lot of genetic information on its set of chromosomes. Many of those genes are found on even distantly-related organisms, and often in very similar form. Really important genes may have long stretches that are identical across organisms like fish, birds and monkeys. Genes that are less critical may have mutations that over time have changed the sequences between organisms - very closely-related organisms may have small changes, while distantly-related organisms may have lots of changes, and sometimes pretty big changes, too. Whole sections may be different or even gone, or there may be sections that have been added or duplicated. As a rule, the longer it has been since evolution caused organisms to diverge from each other, the more changes there are in the genes. If you pick an important gene, it may be very similar between mice and rats; it may even be fairly similar between mice and squirrels; it might not be too different between mice and cows, but it will probably have some significant differences between mice and fish, and may be very different between mice and bacteria (but still recognizable as being basically the same gene).
