having really simple nervous systems though would mean they can react very very fast I'm sure
Not really, but a few spiders have nerve conduction and reaction that borders on precognition.
I once dropped a cricket into the web of one of my pet house spiders,(southern house spider)
and she literally came out of her hide, and was on the cricket before it hit the surface under her web.
